A delicious addition to your Christmas menu and high in Omega 3 fatty acids. A dish that is good on the eyes and good for the eyes!

Salmon Pinwheels


  • ½ cup coarse dry breadcrumbs, preferably whole-wheat
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon whole-grain mustard
  • 1 tablespoon chopped shallot
  • 1 tablespoon lemon juice
  • 1 teaspoon chopped rinsed capers
  • 1 teaspoon chopped fresh thyme, or ½ teaspoon dried
  • 1¼ pounds center-cut salmon fillet, skinned and cut lengthwise into 4 strips
  • 4 teaspoons low-fat mayonnaise



  1. Preheat the oven to 200°C and grease a large baking tray with olive oil
  2. Combine breadcrumbs, thyme, shallots, capers, olive oil, mustard, and lemon juice together
  3. Spread 1 teaspoon of mayonnaise then add three teaspoons of the breadcrumb mixture to each salmon strip
  4. Then roll each strip into a wheel and use a toothpick to hold in place. Place on the baking tray
  5. Bake the wheels for 15 minutes, ensuring it has cooked through
  6. Remove the toothpicks before serving


This dish can be served as a starter or main. For a main, we suggest serving with garlic green beans and rosemary roasted potatoes.
